Italian Sangiovese grape juice produces a wine with a flavor profile of tart cherry, strawberry, plum and savory herb, over a vibrant backbone of high acidity. That acidity can be aggressive early on, so winemakers often age Sangiovese in oak barrels to soften the structure.
The grape originated in the Tuscany region of Italy, where it was known as far back as the 16th century. Sangiovese is the main component in Chianti, and is used to make the modern Super Tuscans, which usually combine it with Bordeaux grapes such as Cabernet Sauvignon, Merlot or Cabernet Franc.
High acidity and an earthy tannin structure pair it best with tomato based Italian dishes, savory grilled meat and aged cheese.
