Reverse Osmosis (RO) allows wine to be pumped at high pressures past a semi-permeable membrane to separate the water and ethanol from the wine. The filtrate which passes through the filter membrane contains virtually no anthocyanins, phenolics, tartaric, malic, or citric acids. This means that the characteristics that make up a wine, never actually go through the filter!

Our setup for VA removal has been revamped with a state-of-the-art design. We operate a Della Toffola Reverse Osmosis Filter that has 8 RO membranes capable of an output on average of 250 gallons an hour of permeate. The permeate goes through custom-built sanitary tanks with resin that traps Acetic Acid and the treated permeate is mixed back with the original wine.
