Italian Dolcetto grape juice produces a dry, full bodied wine with noticeable tannin, fruit driven, with moderate levels of acidity. Dolcetto wines are known for flavors of licorice and black cherry and for a characteristically bitter finish reminiscent of almonds. It is considered a light, easy drinking red, and pairs well with pasta and pizza dishes.
Dolce is the Italian word for sweet, but the name refers to the low acidity of the grape and the sweet ripeness of the fruit in the vineyard, not to residual sugar in the finished bottle.
Best consumed young. Acidity is low to moderate compared with other Italian reds such as Barbera.
