California Merlot grape juice can yield a soft, fruit forward wine with notes of black cherry, currant and cedar. Secondary notes can be subtle green olive and mild herbaceous undertones.

The body and texture of Merlot are softer and less bold than Cabernet Sauvignon, offering a smooth, approachable mouthfeel.
