California Sauvignon Blanc grape juice produces crisp, dry wines with light to medium body. These wines are a balanced mix of citrus fruit and mild herbaceous traits.
Flavors have been described as lime, grapefruit, green apple, pear and subtle melon. Aromas have been described as grass, weeds, lemongrass, gooseberry, bell pepper, green olive, asparagus and capsicum.
Sauvignon Blanc has a distinctive, sharp aroma with naturally high acidity. It is widely blended with grapes such as Semillon to add weight, body and complexity that soften its sharp, vibrant acidity. It is also a component of the dessert wines Sauternes and Barsac.
