Wines from California Ruby Cabernet juice are easy drinking and fruit forward, with deep color saturation.

Dominant fruit flavors can include sour cherry, blackberry and black currant. The wines are generally low in natural acidity, with a light to moderate tannin structure and high alcohol potential.

Popular with home winemakers for its smooth texture, Ruby Cabernet is heavily used as a workhorse blending grape. Its vivid, intensely pigmented juice adds an instant boost of rich ruby color, earthy character and bulk volume to softer red blends.
