They get there by cutting steep-out moisture, lowering germination temperatures and finishing on a cool, gentle kiln to hold color under 2.5 SRM.\u003c\/p\u003e\n\u003cp\u003eGenuinely under-modified malt is rare in the US market, and it tastes different. Grainy sweetness with cooked rice and pear, finishing on fresh-cut wildflowers and hay. It is now the first Certified Regenified malt house in the world. Grain comes from family-owned farms inside roughly a 500-mile radius of Asheville, across North Carolina, Tennessee, Kentucky, Virginia and Florida.
